Over the last weekend #TheBaldOne decided that the time had come for his very first visit to Maitland farm, kitchen, & spirits on Derby Street. This section of Salem pavement holds special memories for our shy and unassuming protagonist, as he spent his innocent, carefree teen years along the Derby waterfront. He seems to recall this spot as a barber shop back in the day.

This experience will be covered in two separate posts. This one will be about the imported Jamon iberco, or Iberian Ham which sits in beautiful, serene repose on the bar. There are Spanish rules and regulations that apply to this dry-cured meat. It can only be made from pure Black Iberian Pigs or from 50% Black Iberian mixed with Duroc Pigs. Up until a few years ago it was very difficult to bring into this country.

Our hungry hero decided to explore it. How could he not? A small Charcuterie was put together and presented. With a smooth texture, and a rich, savory flavor accentuated by consistent marbling every bite was a treat. The old-school way of preserving certain meats is still the best way, and a few nibbles of this ham is proof.

This is a must try experience for both the carnivores and omnivores out there. Don’t delay.

We don’t hear from our man #OverTheHill very often. But when we do, the photos are always clean, and his comments succinct and nicely composed. He enjoyed this Duckworth’s Mushroom Soup at Maitland farm, kitchen, & spirits very much. “Very delicious. Flavorful, rich, comfortable… but obviously you should experience it for yourself to come to your own conclusion.”

Early yesterday afternoon we stopped into Maitland farm, kitchen, & spirits to say hello. It was a fine plan, except the place was packed to the rafters, with a short wait for a seat.

No worries. We’ll try again very soon.
