As new spots are opening in town #TheBaldOne is trying to stay on top of things. Au Gratin Salem has been open for about a month now, and on Saturday night past it was time for a second visit. The dining room is brightly lit, and decorated nicely, with seating for 15 or so guests. Overall it’s a great build out that makes efficient use of available space to include a brand new kitchen, and pristine rest room.

The menu feature soups, salads, a variety of paninis, mac & cheese options, a few lobster dishes, and a selection of fries and other sides. There is also a plant-based menu which can be viewed in the last photo.

Our man with the white beard started with a soup, Italian Penicillin. This bowl of shredded chicken, pureed veggie broth, pasta, parmesan, and perfectly portioned cracked black pepper is ideal for this cold and flu season. A bucket of this soup is our suggested prescription for whatever ails you. The Crispy Brussels came along for the ride. These were nicely toasted in a Ponzu sauce, and provided a little contrasting crunch to the soup.

Next up for the main course was the Chili Mac & Cheese. This was our first experience with Campanelle pasta. Shaped like a small cone with ruffled edges it looks somewhat like a small bell and it holds onto the thick, creamy four cheese blend and additional cheddar quite well. Onions, sour cream, and cilantro provide a good mix of textures and flavors that are accentuated by fresh sliced jalapeños and crunchy tortilla strips. This dish sent our BaldGuy onto Mac & Cheese ecstasy.

Au Gratin Salem is open and awaiting your initial visit. Chef Mike has developed his basic recipes and is excited to hear your thoughts.

Here we see the Meatloaf Panini and Potatoes Au Gratin. The meatloaf features a subtle BBQ tang, and a thick slice of bacon. Three cheeses play together in the potatoes.

A separate plant-based menu is in the works and we have no doubt that it will be a good one.

There’s good news on Washington Street on the Au Gratin Salem front.…

There’s good news on Washington Street on the Au Gratin Salem front. They are getting closer to opening in the old hot dog space. The place has been gutted, and completely renovated. The kitchen is brand new, from the floor to the ceiling, and a sparkling new restroom awaits you.

The expanded dining room will include bench seating along the walls and front window, and a small counter space with a few seats. The new lighting looks good, and art work is on the walls. We’ll get some dining room photos after the dusts of renovation have settled and been cleared.

Nice work Chef Mike. We are looking forward to the opening.

We’ve been waiting in quiet anticipation as Au Gratin Salem slowly builds out the old hot dog space on Washington Street. Yes, we miss what was, but we are much more excited about what is coming.

We had a chance to sample some of Chef Mike’s Au Gratin offerings on two different occasions when he previewed the menu. #TheBaldOne was very impressed as were a few others who got to try a bite or two.

“For everything there is a season.”

Boston Hot Dog Company after a long run as the premier hot dog spot in Salem is about to enter into a cocoon season, after which it will emerge as a beautiful Butterfly. Chef Mike Denk, is excited to finally begin his dream project to be called Au Gratin Cafe.

There was a short test run of the concept a few months back and we loved the Paninis.

We’re excited for Mike and his team and look forward to experiencing all Au Gratin Salem has to offer.

We gave you a brief intro to Salem’s newest, we think only Breakfast Pop-Up the other day. Au Gratin Salem operates out of Boston Hot Dog Company on weekends. Chef Mike Denk has a passion for what he does, and this little venture shows that clearly.

The menu is small and simple. A healthy parfait with Greek yogurt and fresh fruit, oats in peanut butter & banana or fresh or with mixed berries, baked French toast, and a selection of egg paninis.

#TheBaldOne dropped in on Saturday morning at the invitation of Chef Mike. His inclination was to ask for the Corned Beef Hash Panini, because he just loves exploring different takes in this classic breakfast creation. But somehow he was talked into the Steak & Egg Panini.

It started with the Yogurt Parfait. Greek yogurt, mixed berries, banana, granola, and a base of honey. The fruit comes in a cup on top of the container so you can add it to your own preference and taste, It was fresh, cool, and delicious. Our BaldMan watched as the panini was prepared, beef short rib, scrambled egg, caramelized onion, roasted garlic spread, American cheese, and house dijonaisse. There were no regrets, none. The roasted garlic and dijonaisse put this sandwich over the top. This meal was Chef Mike’s treat.

Sunday morning brought another visit by #TheBaldOne because he just had to try the Corned Beef Hash Panini. It was imperative, like a call from the wild that could not be resisted. House corned beef hash, scrambled egg, Russian dressing, three cheese mornay, scallion, and Calabrian chili blend nicely with the excellent hash. The Calabrian chili and Russian dressing really make this sandwich pop. The Overnight Oats prepped the appetite beautifully. This time #TheBaldOne payed his way.

This is will be a great weekend option for the quick grab & go types out there.
